Ingredients
  • 6 eggs /1 egg white reserved for brushing/
  • 300 g granulated sugar
  • 160 ml fat / butter + lard/
  • 400 ml fresh milk
  • 2 tbsp sugar
  • 1 tsp salt
  • 1 cube fresh yeast /42 g/
  • 2 liquid vanillas
  • zest of 2 lemons
  • 1 package Turkish delight
  • 1 packet raisins
  • about 1.200 kg sifted flour
Preparation
  1. Sift the flour into a large bowl and make a well.
  2. Beat the eggs with the sugar, add 1/2 of the slightly warmed milk, vanillas, and lemon zest.
  3. Warm the other half of the milk and activate the yeast with 2 tbsp sugar and 1 tsp salt.
  4. Once bubbly, add it to the egg mixture and gradually mix into the flour with a spatula.
  5. Knead with your hands until the dough is soft but not sticky, then let it rise.
  6. Knead again adding the fat and let it rise once more before dividing into 4 and shaping.
  7. After the third rise in the molds, brush with egg white and sprinkle with sugar. Bake at 180-200° until golden.
