Ingredients
  • chicken fillet – 200 g
  • coconut milk – 400 ml
  • carrot – 1 pc
  • bell pepper – 1 pc
  • mushrooms – 100 g
  • garlic – 2 cloves
  • ginger – 1 tsp
  • olive oil – 1 tbsp
  • chicken broth – 500 ml
  • salt – 1/2 tsp
  • black pepper – 1/2 tsp
  • lime juice – 1 tbsp
Preparation
  1. Cut the chicken into small pieces.
  2. Chop the vegetables.
  3. Sauté garlic and ginger in olive oil.
  4. Add the chicken and cook until lightly golden.
  5. Add the vegetables.
  6. Pour in the broth and coconut milk.
  7. Simmer for 10–15 minutes.
  8. Season with salt and pepper, add lime juice, and serve.
