Ingredients

4 egg whites at room temperature

1 tablespoon cornstarch

1 teaspoon lemon juice

1 pinch of salt

1 vanilla powder

For decoration: 250 ml whipped cream

frozen blueberries

fresh rosemary
Preparation
Whip the egg whites, salt, and lemon juice with a mixer until stiff peaks form, then gradually add the powdered sugar and continue whipping.
You should achieve a meringue mixture (thick, smooth, glossy with peaks).
Very carefully add the cornstarch and stir for about ten seconds.
Pour the mixture into a round 20 cm diameter cake pan lined with baking paper.
Bake at 130 degrees for about 1 hour or until slightly pink.
Once the cake base cools, whip the cream with sugar and pipe it onto the cake.
Decorate with red blueberries and rosemary sprigs or seasonal fruits as desired.
