Ingredients
  • quinoa – 200 g
  • avocado – 2 pcs
  • cherry tomatoes – 200 g
  • cucumber – 1 pc
  • spinach – 100 g
  • pomegranate (seeds) – 100 g
  • walnuts – 60 g
  • olive oil – 3 tbsp
  • lemon juice – 2 tbsp
  • honey – 1 tsp
  • salt – 1 tsp
  • black pepper – 1/2 tsp
Preparation
  1. Rinse the quinoa and cook it in a 1:2 water ratio for about 15 minutes.
  2. Let it cool.
  3. Chop the avocado, cucumber, and tomatoes.
  4. In a large bowl, mix the quinoa with spinach and vegetables.
  5. Add the pomegranate and walnuts.
  6. In a small bowl, mix the olive oil, lemon juice, honey, salt, and pepper.
  7. Drizzle the dressing over the salad and gently toss.
  8. Serve.
