cherry tomatoes – 200 g

spinach – 100 g

pomegranate (seeds) – 100 g

walnuts – 60 g

olive oil – 3 tbsp

lemon juice – 2 tbsp

black pepper – 1/2 tsp
Preparation
Rinse the quinoa and cook it in a 1:2 water ratio for about 15 minutes.
Let it cool.
Chop the avocado, cucumber, and tomatoes.
In a large bowl, mix the quinoa with spinach and vegetables.
Add the pomegranate and walnuts.
In a small bowl, mix the olive oil, lemon juice, honey, salt, and pepper.
Drizzle the dressing over the salad and gently toss.
Serve.
