Preparation
Chop the onion, carrot, and zucchini into small cubes.
Heat the oil and sauté the onion and carrot for 2-3 minutes.
Add the zucchini and stir briefly.
Pour in the water or broth and bring to a boil.
If desired, add the rice and cook until tender (about 15 minutes).
Season with salt and black pepper.
Optionally, stir in beaten egg and yogurt, sprinkle with chopped dill, and serve.
