Yellow Lentil Meatballs

Ingredients
  • 1 cup yellow lentils
  • 1 stalk leek
  • 1 bunch green onions
  • 1 bunch fresh garlic
  • 1 bunch parsley
  • 3 tbsp olive oil
  • salt
  • black and red pepper
  • oil for frying
Preparation
  1. Soak the lentils in water overnight. Drain and blend with olive oil, salt, black and red pepper to taste.
  2. Finely chop the leek, green onions, garlic, and parsley, then add to the mixture.
  3. Form meatballs with damp hands and fry in hot oil. For a healthier option, bake on parchment paper.
